This person would be assisting the F&B Manager to ensure all stock movement is accurately recorded and accounted for and moved to the relevant hospitality areas for regular trade which occurs weekly around the track.
The F&B managers “go to” person
Other areas include working in the bar/s, booking relevant staff for daily trade and events, cash ups, POS (Platinum), have kitchen experience to over-see same in all the restaurants, build relationships with customers, working with the admin manager, doing weekly beverage stock takes, etc.
This person needs to work shifts, have strong people, admin, and computer skills. Be good with planning, clean, neat, dynamic, hard working, have their own car with valid drivers’ license, and be of good health.
Ensuring all staff have arrived for shift
Ensuring floats are checked, all staff signed in and out, dressed appropriately for shift etc.
Ensuring shop ready for trade
Responsible for ensuring all bars/waiter stations/kitchen are open on time, prepped and manned, no unstaffed areas
Daily stock take to be done, handed in to the Admin Manager
Juices, box wine etc. to be tasted each morning to ensure they are still fresh
Fridges temperature, Keg, Gas, etc. to be checked
Bars to be stocked of all beverages, chips, biltong etc./Stock rotated and expiry dates checked
Ensuring opening and closing proc’s are followed
Ensuring health and safety procedures are followed
Training of new staff on menu, POS, coffee station, health and safety, opening/closing procedures.
Ensuring Wastage Reports are noted each closing shift in the sign in book
Ensuring once a month (mid-month) deep clean is done
Ensuring weaknesses and strengths of bar/floor/maintenance staff are noted and reported to Clubhouse Manager
Ensuring staff are aware of weeks roster and ensuring they sign off such
Ensuring all new staff have basic menu training
Ensuring general practices of Trackside are adhered to.
Continually liaising/reporting to Clubhouse Manager and Admin Manager with regards to stock issues, maintenance issues etc, all being reported timeously in order to action repairs
Assisting with roster if necessary as well as finding casual staff when and if necessary
Assisting Admin Manager with month end stock takes
Responsible for closing shifts
